A zippy & herbal update to the classic Spritz. This recipe showcases the tart & earthy elements of rooibos tea and the slight sweetness of Mandarin, without dulling the bold dry gin. The Soda water brings effervescence and heightens the botanicals of the gin, making for a long and thirst-quenching springtime cocktail. The perfect Aperitivo for the warming months. A great option if you’re hosting a party and an easy way to impress your guests.

Ingredients

60ml Rooibos Tea Infused Gin (we used poor toms fools cut)

40ml Grove Mandarin Juice

20ml Simple Syrup

Long Rays Australian Soda Water

Method

Infuse your Gin: Easily accomplished by adding your 60ml measurement into a glass and adding the tea bag (we used Nerada Organic Teabags) Allow the gin to infuse for a minimum of 30mins. You are looking for a nice deep crimson colour and a vibrant nose.

In the glass: Add your gin, simple syrup and mandarin juice. Fill the glass with ice and gently stir to incorporate ingredients.

Top with soda water.

*Garnish with orange zest twist & Flowers (we used baby breath as a contrast of colour)*
